Webber 2barrell carb wit velocity stacks

So I'm wanting to go gravity fed and fuel pump delete but since I'm riding my custom rat bike I'm wanting to do away with the factory carb and I'm wanting to run a webber 2barrell with velocity stacks and I'm wondering which model webber would work best ? And just so everyone knows I ride hard every day no matter what the weather is and I ride coast to coast
